Our 2014 Cabernet Reserve is a beautiful wine sourced from 2 stand-out Columbia Valley vineyards: Firethorn Vineyard in Echo Oregon and Moody Vineyard at the confluence of the Deschutes and Columbia Rivers. This beautiful Reserve level Cabernet Sauvignon is earthy and savory, with nose of pink peppercorn, tarragon and slate. The palate is reminiscent of Nasturtiums and plum, and has sturdy tannins and a dry finish.
Throughout the history of Cathedral Ridge, our Cabernets have stood the test of time, aging gracefully in our cellar. Herbaceous classic Cab notes are developed while maintaining the beautiful black fruit that makes them so bold and luscious. A favorite pairing for our Cabernet Reserve includes a Mac n’ Cheese done Becky’s way with White Cheddar and Gruyere. Or, use the recipe we include with purchase, Warm Brie with Wild Mushrooms and Walnut Oil.[show_more more=”Read More” less=”Show Less”] With a pH of 3.79 and a TA of 6.4, this wine has a perfectly balanced acidity and will cellar extremely well.
