A sweet and savory spread makes the best pairing with a fruit forward and savory wine like our Syrah. Easy to make and keeps really well, the Bacon and Fig jam is great on toast for brunches and even better tossed with roasted brussel sprouts or atop succulent pork chops. All of which partner so beautifully with our Syrah, each sip and each bite is a transporting experience. Yum. Make it ahead of time and break it out whenever you want to dress something up to impress the palate!
In a large saucepan combine everything but the bacon and let rest for 20 minutes.
After 20 minutes, bring the mixture to a boil over medium-high heat.
Reduce to a simmer and add the bacon, stirring every minute to avoid burning.
Continue cooking and stirring until the mixture has been reduced significantly and it has thickened up, approximately 20 minutes.
If a smoother jam is desired, mash the figs from time to time in the mixture.
Remove from heat and let cool.
Once cooled, pour the jam into individual jars and refrigerate.
The jam will last up to 4 weeks in the refrigerator and is perfect on crusty bread, alongside cheese and salami, or inside a gruyere grilled sandwich! Yum!
